~ Muffin Monday ~ Strawberry Coconut Muffins and WIN a

Monday again! And Monday just ain’t a Monday without a muffin treat to kickstart the week and make my colleagues feel happy

They were on sale this weekend for 2 punnets for $3!!! Seriously! Like weren’t they just $7 a punnet last week? It makes the Dancing Daughter happy to have fresh strawberries for her cereal and you know I bought some BIG ones to make those beautiful chocolate dipped strawberries that disappeared so quickly last time I made them.
So this week’s muffins are all about the strawberry and coconut combination that is simply delightful. You’ll feel like a summery party in your mouth!

Strawberry Coconut Muffins ~ yields 12 muffins
2 cups gluten free all purpose flour
3/4 cup brown sugar or ¾ cup Natvia with maple syrup
1 tsp gluten free baking powder
3/4 tsp salt
1 tsp xanthan gum
¾ cup shredded coconut
1 cup milk
1 tsp vanilla
1/3 cup melted coconut oil
1 cup fresh strawberries, diced
Shredded coconut for topping
Preheat oven to 170° and spray or line a 12 cup muffin pan.
Combined the brown flour, brown sugar, baking powder, salt, and xanthan. Mix the milk, egg, vanilla and coconut oil in a small bowl and add to the dry ingredients and mix with a wooden spoon until just combined.
Gently add the strawberries and coconut and mix lightly.
Divide mixture evenly into prepared pan and sprinkle the tops with additional shredded coconut.
Bake for 18-20 minutes or until golden brown.
Remove from oven and cool in the pan for 5 minutes before removing to cool on a wire rack.
