~Faux Foodie Friday ~Lamington CAKE and WIN a Slow Cooker/Sous
Vide and GF 4 Ingredients!!!
I was going to do a Failsafe Friday recipe but I’m just not feeling it. No really, I’m just not feeling it! I am so frustrated with the ongoing sagas of my suspected intolerances that I’m just going to have to “bite the bullet” and do a full on elimination and then test. I’m struggling with coffee (decaf only), dairy and a few other things and am getting really sick and tired of trying to figure out why I just feel unwell. So, while I’ll be eating brown rice and vegetables for every meal (not really but it feels like it!), I will still cook my family and you because you deserve lovely treats too
Roy also had that massive cake size Lamington week before last in Hobart which got me thinking about a Lamington cake.
I made this out of a beautifully light sponge cake and it came together quickly and easy as 1-2-3! Make it to share with friends or your beautiful family. It’s a new take on an Aussie tradition!

Faux Foodie Lamington Cake ~serves 10
2 x boxes gluten free sponge cake mix and ingredients (I used Woolworths No Gluten mix)
1 x jar strawberry jam
1 x recipe Twinkie Cream Filling
1 x can prepared chocolate icing
Shredded or Flaked Coconut
Make the round sponge cakes as per the box instructions and allow to cool fully on a wire rack.
Spread strawberry jam on top of the filling and top with the second layer of sponge cake.
Gently warm the icing for approximately 15 seconds and ice the tops and sides of the cake.
Allow to set slightly before pressing the coconut over the top and sides. Slice and enjoy!
