Cooker/Sous Vide and GF 4 Ingredients!


There are just some foods that I associate with geographical locations. ……
Tulsa = Sonic and El Rancho Grande
Melbourne = Coffee!!!
Chicago = Pizza
Sydney = Chicken ‘n Waffles at Jazz City
Port Douglas = Seafood
New Orleans = Spumoni
Aspen = Crepe Cart butter & cinnamon crepes after skiing all day as a kid


San Francisco = Pasta (Basta Pasta is the catalyst from a childhood visit)
Vail = Fondue
Texas = Mexican
New York = Pretzels……..and Crumb Cake.

Chelsea and I had the extreme pleasure of doing a trip to NY and Chicago a few years ago and we had the-best-time-ever. We ran from 7 in the morning until at least 11 ever night. We ate, we shopped, we saw a Broadway show, we shopped, we ate, we went sightseeing, we shopped, we did a Hop on / Hop off bus tour, we ate, we ate with a long time internet “pen pal” and her daughter that I had never met in person. And then the 4 of us shopped! It was an amazing experience but I don’t know I don’t know why I think of Crumb Cake with New York. I didn’t even HAVE a piece of Crumb Cake in New York. I think I may associate it with NY because of Cake Boss, Buddy Valastro, who doesn’t even operate Carlo’s Bakery in NY but in New Jersey. Who can understand how the mind associates things?

But Crumb Cake is a quintessentially 1970’s cake that has had a revival in recent years and thank goodness it has. Moist cake topped with buttery, sugary crumbs along with a cup of coffee for morning or afternoon tea or gently warmed and topped with ice cream and caramel sauce as a dessert. You cannot go wrong with a crumb cake. My personal favourite would have to be Cinnamon Swirl Crumb Cake but, since cinnamon is excluded on Failsafe, I decided to use the over ripe bananas on my kitchen bench and bake a couple o cakes for my esteemed colleagues.

Between my beautiful family and my colleagues, there’s not a crumb left :)

Banana Bread Crumb Cake ~serves 24
2 cups gluten free all-purpose flour
¼ tsp xanthan gum
3 tsp baking powder
1 tsp salt
3 ripe bananas
1/2 cup butter, margarine or applesauce room temperature
1 & ½ cups Natvia for Baking
2 eggs room temperature
1 tsp vanilla
1 cup milk room temperature
Crumb topping
½ cup cold butter cubed or cold margarine
1 cup light brown sugar (or 1 & ½ cups Natvia mixed with Maple Syrup for Failsafe)
1 cup gluten free all-purpose flour
1 cup Natvia Icing Mixture or my Homemade Natvia Icing Sugar
1-2 Tbsp milk

Preheat oven to 160° and lightly spray a 9×13 baking dish with cooking spray (I used Chinet Bakeware so I didn’t have to spray and could take straight to work!
In a medium bowl whisk together flour, xanthan gum, baking powder and salt. In a large bowl mash bananas and mix in the butter until combined. Stir in the Natvia, eggs and vanilla until mixed well.

Stir in milk and flour until combined and pour into the baking dish.

Prepare crumb topping by combining all the ingredients and cutting them together with a fork or pastry cutter until a coarse crumb forms.

Cover the cake batter with the crumb mixture.

Bake for 45-50 minutes or until a skewer inserted in the middle comes out clean. Allow to cool for approximately 15 minutes.

Prepare the glaze by mixing the Icing mixture with milk until the desired consistency is achieved. Drizzle on top and serve!

    Slow Cooker Sunday ~ Nutty Salsa Chicken, my family are Mexican mad and this so easy and delicious to make when I am working the grave yard shift I get up and dinners done. I have also made a pork version with minced meat not as great as chicken but still nice. We serve ours burrito style with lots of lettuce, tomato and avocado wrapped up in tortillas

    I’ve only just come across your page so admittedly haven’t tried any of your slow cooker recipes. I’ve had a long look and pinned quite a few recipes. They are so good!! Love Mexican food too and the cream cheese mexi chicken sounds like a winner! Can’t wait to try it out :)
