Melinda’s on Monday thanks to a Wonderful Friend!!!!

You all know that I am a big fan of Melinda’s Gluten Free Goodies (as well as Melinda who I met last year at the Gluten Free Expo. She’s such a sweetheart!). And I have to say that her premix Brownies are certainly super scrumptious and my favourite on the market. I’ve Road Tested several of Melinda’s products for you and, when I can actually follow instructions, the results have been outstanding.

I was really perplexed when my darling husband brought in an ENORMOUS box addressed to me that had a return label from Melinda’s Gluten Free Goodies. I was even MORE perplexed when I opened up this box that was chock-a-block full of an assortment of goodies in a big basket wrapped with hot pink tissue and a pretty bow. My confusion turned to pure joy when I noticed a card from a wonderful and dear friend who had sent me this inordinately large box full of 24 mixes, 2 packages of savoury crackers and pink tea towels. 24 mixes, ya’ll!!!

I was simply overwhelmed by the generosity of my darling friend who has been was not planning on baking but, a batch of brownies and a test of a slice had to be done STAT!

Melinda’s on Monday & Road Test Tuesday ~ Melinda’s Irresistible Passionfruit Flavoured Slice
What you will need:
Melinda’s Melinda’s Irresistible Passionfruit Flavoured Slice Mix
Vegetable oil or butter/margarine
Condensed Milk
Passionfruit or passionfruit pulp (or fruit of your choice)

Because I wanted to share the spoils of this Road Test and I like a TALL and THICK slice, I used 2 mixes and a bigger pan rather than 1 mix and a 20 x 20 cm pan.

Simply mix the crumb base with the oil as directed and bake for 15 minutes until golden brown.

Combine the provided lemon sachet with your own condensed milk and fruit of your choice (the passionfruit is not included). I used strawberries and strawberry jam.

Pour it on top of the base and bake until set (about 25 minutes).

Allow to cool completely before cutting. A plastic knife works best for a clean cut.

Melinda’s Irresistible Passionfruit Flavoured Slice Verdict 8/10– This was really easy to make and the base mixture was super delicious. The Condensed Milk may be better suited to another fruit that is not so sweet. The slice provides a nice texture and taste and is perfect to share for morning or afternoon tea. A drawback is that the mix does not come with the passionfruit pulp which I wasn’t expecting.
