Glazed Gingerbread and Apple Muffins {WIN an iPad!}

Muffin Monday is BACK baby!!!!  I’ve been on a bit of a loaf kick so muffins have received the cold shoulder but, continuing on from my gingerbread obsession (courtesy of an amazing work colleague who is a self-confessed ginger freak), these were amazingly moist, delicious, and because they are made with Natvia AND fruit, can totally qualify as healthy.  Perfect for all those office people who are on a 2014 DIET!!!!! (There’s one in every crowd :) )

 

Gingerbread and Apple Muffins with Natvia Icing Sugar Glaze~ (yields 12 muffins)
2 & ½ cups gluten free flour
1 & ½ tsp xanthan gum
1 & ½ tsp baking soda
1tsp baking powder
2 tsp ground cinnamon
2 tsp ground ginger
½ tsp salt
½ cup sugar or sugar substitute like Natvia
½ cup packed light brown sugar
2 Tblsp molasses (I sourced mine from USA Foods)
6 Tbls maple syrup
4 Tbls honey
8 Tbls butter or margarine at room temperature
1 extra-large egg at room temperature, beaten
1 cup warm water
2 Tbls applesauce
1 Large apple diced
Sugar Free Icing Sugar Glaze (1 cup Sugar Free icing Sugar with a bit of Almond or Skim milk)

Preheat oven to 180° or 160° fan forced.  Spray or line 12 standard size muffin cups

In a large bowl, place the flour, xanthan gum, baking soda, baking powder, cinnamon, ginger, salt, and sugar.   Whisk to combine well.

Add the brown sugar, molasses, maple syrup, honey, butter and egg. Mix to just combine Add the water and mix until smooth.   Add the applesauce and diced apple and stir until just combined.

Spoon into the muffin cups equally.

 Place in the oven and bake for 20-25 minutes until a skewer comes out with, at most, a few moist crumbs attached.

Remove from the oven and allow to cool in pan for 5 minutes.   Transfer to a wire rack to cool completely before drizzling with the yummy glaze.
