Tribute and Road Test Tuesday ~ Hard Rock Cafe Twisted Mac ‘n Cheese!

Yes I am aware it is now WEDNESDAY and not Tuesday But the last 3 days have been extremely busy at work and I am stretched for time so here it is, a day late but definitely not a dollar short (see the giveaway).
Did I mention that it is less than TWO WEEKS before I get to be on holidays? We are stopping over at the Gold Coast and one of our favourite places to eat as a family is Hard Rock Café. I think we have worked out that one or all of us have been to the following locations:
• New York
• San Francisco
• Los Angeles
• Puerto Vallarta
• Surfers Paradise
• Las Vegas
My first HRC experience was in London on New Years Eve in 1985 with my Dad and Step Mum. We flooked a table at the crowded venue and I was hooked! My best experience at HRC was in Orlando when the temperature outside in the theme parks was below freezing (I kid you not, IN ORLANDO!) and we knew we wanted to have lunch at HRC and finally warmed ourselves inside with heat and delicious food!
I do love the Chicken Haystack Salad but always eat myself into a stupor with it so have learned my lesson. However, given my partiality to Mac ‘n Cheese, I miss the kids menu Twisted Mac ‘n Cheese (the adults is huge and served with a big chicken breast). Chelsea also is a fan and, since the folks at Casalare were kind enough to give me some pasta at the GF Expo, I knew exactly what dish they would be employed in!
This recipe is as close as I remember the real thing to be……creamy, delicious, filling and full of southern comfort. Turn up the music, pour yourself a Hurricane, and sit down to this meal. You’ll feel right at the Café!
Tribute and Road Test Tuesday ~ Hard Rock Café Twisted Mac ‘n Cheese (serves 4)
1 x box Casalare Macaroni Twists or gf macaroni of your choice
2/3 cup milk, plus a splash more
1 x small Kraft block cheese, cubed
1 & ¼ cup shredded cheddar cheese
¼ tsp ground black pepper
¼ tsp paprika
4 Tbls GF bread crumbs
4 Tbls grated Parmesan cheese
¼ tsp parsley
Use a large saucepan to cook pasta in salted water as per directions and drain well.
Combine milk, Kraft block, cheddar cheese, paprika and black pepper in the same saucepan and heat over low heat for about 10 minutes until the cheese is melted and sauce is smooth. Add pasta and toss to coat.
Combine the breadcrumbs, Parmesan and parsley in a small bowl.
Pour pasta in a serving bowl and then sprinkle Parmesan breadcrumbs over the top. Bake in oven for a few minutes if desired.
Casalare Macaroni Twists Verdict– 9/10
A rice based pasta that finally stands up to heat and doesn’t end up in a mushy mess! I slightly undercooked the noodles to ensure they didn’t turn soggy but this pasta is great. I’ve used the Lasagne sheets and Cannelloni many times before with great success so I was pleased that the pasta shapes were as robust and just like their
poisonous glutenous counterparts. Well worth purchasing online!
