Woolies Wednesday ~ Sweet Mimi’s
I have confessed before that I am a food show tragic! I tend to watch Masterchef (hurry up and come back!), Top Chef, Everyday Gourmet, Jamie Oliver’s shows, and I watched Recipe to Riches. I quite liked the show but didn’t watch the finale because I knew who won and I was bitterly disappointed. Chocolate Popcorn (Chocorn) won and I really thought that the Sweet Billies or the Golden Greek Pizza Kit should have won. Anyway, that’s my opinion but the episode featuring the USA Southern Vicki was not only highly entertaining, but I enjoyed her product visually and thought it would be great adapted to gluten free.
While Vicki called her cookies after her departed Mother, I am paying homage to my chocolate loving mother calling my adaptation Sweet Mimi’s (Mimi is what the grandchildren call her:) ) She is the only person I know who has eaten brownies “in her sleep” and accused everyone else of taking them out of the pan. The perfectly formed right angle fork marks, however, gave her away as everyone else would just cut jaggedly with a knife!
So enjoy this super Faux Food recipe based on the concept from Vicki and her Mom!
Sweet Mimi’s ~ (makes 12 sandwich cookies)
Recipe inspired by Recipe to Riches Sweet Billies
1 x batch of my cake mix cookies using chocolate cake mix
1 x can of Duncan Hines prepared frosting
Mini muffin pan or small macaron/whoopee pie pan
Preheat oven to 180° or 160° fan forced and spray the pay with cooking spray.
Make the chocolate cookies as per the instructions and pipe or cookie scoop into the macaron pan.
I used an extra egg yolk to make them more fudge brownie like rather than flat cookie like as is my family’s preference. Bake for approximately 10 minutes until a skewer comes out of the middles almost clean. Remove from the oven and cool completely on a wire rack before removing and turning half of the cookies over.
Place a small amount of the prepared frosting into a piping bag with a star tip and place a small star in the middle of half of the cookies.
Place another cookie on top and press down just until the frosting reaches the sides.
Enjoy with a cold milk or even a second Sweet Mimi!
