Apple Cider Chicken and other words starting with “S”
Sick ~ Last night I had a date night with my sweetie but I have been sick as a dog all day today because of the intolerance I have to so many foods and the list seems to be expanding. Celiacs is my primary focus as well as my latex allergy, but I also have a Salicylate sensitivity which includes wine. However, I knew I would not be well but I underestimated how badly I would feel with an anaphylactic day. Ironically, my horoscope today, which I just read is right on point.
Service – Not only were our meals exquisite last night, the service was amazing. Review coming VERY soon!!!!
Stupid – See Sick above! I knew I would be unwell but did it anyway. I may have really learned my lesson this time.
Sorry – because of my stupidity and selfishness, I missed out on dinner with my kids tonight who visited the Sushi Train, which I’ve been craving for weeks.
Sereal – Ok, Cereal is really a C word but sounds like S so work with me. I had it for dinner so thank goodness I made the Slow Cooker recipe yesterday.
Sleep ~ I told you a couple of weeks ago that I’m a horrible sleeper. Because I was so sick early this morning, I have only had about 3 hours. However, I am happy to say that this is the exception! About a month ago I hit a wall. I’m not talking about a “I’m tired and over it” wall, I mean a great big HULKING sized wall that ended up with me in tears to my Mom, the dancing daughter wondering what in the world was going on, and me finally admitting that I can’t do this anymore. The 2 & 3 hour sleep nights had become the rule and no longer the exception. So I’ve been on medication that I’m slowly adjusting to and I’m sleeping about 5-6 hours every night. I think my body is in shock not knowing what to do! I am so grateful for this change in my life!!
Slow Cooker Sunday ~ Apple Cider Chicken (serves 6)
1 Kilo of chicken breast fillets, washed and pat dry or a full shredded BBQ chicken
2 apples cored and finely sliced
½ cup sultanas
1 & ½ cups apple juice or apple cider
2/3 cup gluten free Italian Dressing
1 Tbls brown sugar
Salt and pepper as desired
Literally chuck everything into the slow cooker and cook on low for 6 hours or high for 4 adding more liquid if needed.
Serve over rice and enjoy!
