Frugal Friday Catch Up ~ Homemade Gluten Free Flour Tortillas!!!!

It’s no secret that I am a Mexican A-Holic. And I SURE have missed flour tortillas!!!! I like corn tortillas, which are mostly gluten free (check that packaging people as some are NOT!), but I love a good flour tortilla.

When the six foot teenager was a toddler we went to Puerta Vallarta in Mexico (and no, not on the Love Boat:) ) and for the morning breakfast buffet, a lovely lady made fresh tortillas on the grill to wrap around your eggs, potatoes and meat. O-M-G, they were SO amazing. Thick and hot and simply delicious and I have not stopped raving about them for almost 16 years!!!

I saw a tortilla press in my favourite dream store, The Essential Ingredient, and knew I not only had to have the press but also to make my own thick, hot and declicious gluten free flour tortillas. These are WELL worth the effort and the dancing daughter thinks they are better than their glutenous store bought versions.

Plus they are so delicious and CHEAP to make, I’ll never buy wraps or tortillas again! You don’t need a press, either, just a bit of elbow grease and rolling pin.

Gluten Free Flour Tortillas ~ (yields 8 Tortillas)
2 cups all-purpose gluten free flour
1/2 tsp salt
3/4 cup water
3 Tbls California Olive Ranch® Olive Oil

In a large bowl, combine flour and salt.

Stir in water and oil.

Turn  onto a floured surface; knead 10-12 times, adding a little flour or water if needed to achieve a smooth dough. Let rest for 10 minutes.

Divide dough into eight portions. On a lightly floured surface, roll each portion into a circle.

In a large non-stick skillet coated with cooking spray, cook tortillas  on medium heat for 1 minute on each side or until lightly browned.

Keep warm. Yield: 8 tortillas.
