I seem to get in a HUGE rut with food and tend to eat the same things for lunch for a long period of time before switching to a new long-running lunch. Well, in the past few weeks I’ve been switching things up which has shocked me but also made things quite a bit more interesting.
I absolutely adore a grilled cheese, and it’s no surprise that I often add softened apple and chicken, but when I wanted breakfast for lunch but thought I needed something with a bit more substance, I was inspired to make a grilled and apple sandwich in the waffle maker! I didn’t have any chicken handy or it would have been deliciously included as well.
All I did was start with slicing the apple finely.
Into a ziplock back it went with a Tablespoon of water. Close the sides but leave the top open and microwave for about 2 & 1/2 minutes. Be careful when you take it out of the microwave as it is H-O-T. I drained the water and blot the apples on paper towel.
Spread the cheese, mustard and apple onto the bread and close the sandwich carefully so all the cheese doesn’t fall out!
Place into the waffle iron for toasty goodness.
If you wish, you can butter the outside of the bread for extra yummyness but I’m not a butter devotee any longer and it was just as delicious without the extra spread.
This is a perfect meal for breakfast or dinner when you are just toooooo tired for anything else (like tonight!!!!) and it sure beats another bowl of cereal and fruit
