Why is it that some restaurants just become our favourite places to visit and others are relegated to “sometimes” or never again? When I was still at University, during the summer breaks I worked at local Tulsa restaurant, Charlie Mitchells, with one of my best friends and we had a ball! Even after I stopped working there, I would go and eat with friends and family which says a lot for the quality of the food as well as the friendly service…..delivered by people who had become my friends!

I worked a lot of hours, made some good waitressing money, ate A LOT of their salads and Turtle Pie, and loved the Sunday open to close shifts as the brunch was a special table where customers could help themselves (yes it made the shift a lot easier but these after-church goers invariably came with babies in high chairs that threw food all over the floor. It was a trade off, I guess!) Charlie Mitchell’s was also a bit of a pioneer in the restaurant world in Tulsa as I don’t remember there to be many choices for families outside of fast food at that point. They opened at the point that the major dining chains started moving in and offered an abundance of choices for family dining.

Only a short time after I left Tulsa and landed in Newcastle, all the Charlie Mitchell’s in Tulsa closed and I can remember feeling pretty sad that I would never have their fresh and simple salad with cheese bread again not to mention the Turtle Pie that we used to “accidentally” ruin when it came out of the freezer and the staff would have to eat it. When we went home to Tulsa for Christmas 2 years ago, Charlie Mitchell’s had reopened in Tulsa and the whole family dined there on Christmas Eve. Not only was the menu exactly the same as 20 years ago, thank goodness, the food was equally as good as I remember and yes, I did have the Turtle Pie filling but not the crust, as well as the salad but no cheese bread.

I wanted to do Tribute Tuesday and this was the first thing that popped into my head…..along with about 6 other restaurants that will now be on the agenda to recreate their special items.

I posted this picture on Facebook last week asking Tulsa people if they could identify the restaurant I was paying tribute to and, after advising that my friend who I worked with should not need ANY hints since we had served and eaten this meal hundreds of times, she confirmed that she thought it was Charlie’s salad with cheese bread, Chicken United, and Turtle Pie.

This chicken dish is simple and simply delicious. You can make it quickly and serve it up to your troops in no time. The Turtle Pie recipe will come to you for another day……I hear that anticipation is good for you :)

Tribute Tuesday ~ Charlie Mitchell’s Salad with Cheese Bread and Chicken United (serves 4)
1 x bag of prepared salad mix or head of iceberg lettuce
3 x hard boiled eggs chopped
1 cup finely shredded cheese
Homemade Gluten Free Croutons (I used cubed Purebred crisped in the oven)
Ranch dressing
2 x Purebred white rolls
1 cup finely shredded cheese

4 x chicken breast fillets, washed and trimmed
Olive oil
Gluten Free BBQ sauce
Thinly sliced ham
4 x slices Light Swiss Cheese

Cook the chicken on the BBQ or in a grill pan, rotating to give the exterior the criss cross pattern.

Remove from the pan to a baking tray when outsides are golden.

Preheat oven to 180° or 160° fan. Top the chicken with BBQ sauce, sliced ham and swiss cheese and place in the oven to finish cooking and melt the cheese.

Meanwhile, slice the rolls lengthwise and top with cheese before placing on the top rack of the oven to melt.

Place the salad greens, chopped eggs, cheese and top with bacon if desired (I don’t dig on swine!), and serve the dressing on the side.
