Slow Cooker Sunday ~ Meatball Stroganoff (Coles Simply Gluten Free)

Tonight I copped out.  I have been having a very difficult time sleeping and between lack of sleep, fierce migraine inducing winds, and putting way too much on my To Do list (AGAIN!!!! I never learn), I am just feeling quite unwell.

Plus, today is one of the Biggest Days of the Year for my dear husband.  Yes, I am referring to the  Bathurst 1000! He was invited to an event today, that I’ve dubbed the Man Cave Party, where they started at 8:30 with BBQ Bacon and Egg Rolls before viewing the race on a big screen, a steak BBQ lunch and several beverages, I’m sure.  Hubby was happy as Larry when I went to pick him up, though, as Ford has finally taken the race.  I, however, did not fare so well in my event today with NO RANK TX beat 12th ranked OU…….what???!!!  The only good thing is that I was awake at 3:10 so got to watch from the end of the first 1/2…..not that I wanted to when I saw the score!

But back to the race.  The first year hubby and I were together he was restoring a car and had yet to put the seats in, which were race seats.  One of those seats made it’s way into our loungeroom for the day in front of the TV.  I guess it was a cheap option to a simulator!

So tonight I tested the Coles Simply Gluten Free Stroganoff sauce and used meatballs and served over noodle twists.

 I don’t eat beef, and didn’t have sour cream so used yogurt, and had to rely on my taste testers for feedback.

So pick this up and follow the very easy instructions for a quick dump-in meal that leaves the house smelling just delicious and will help on those days you simply can’t be bothered but the family still demands to be fed (rude!)

I decided to use some onions and  thick cut potatoes that I put in the bottom of the slow cooker

Dump in the chopped potatoes

Then the meatballs or beef strips and sauce and stir

Stir through after a couple of hours
