Today is a bit of a quickie post (but so is the recipe!) as we’ve had a huge couple of days with the dancing daughter’s tonsillectomy, project “dumping ground to dining room” now complete after a whirlwind day of cleaning (we eat at our kitchen table so this room was the dumping ground but I vow NEVERMORE ), and now the family around for Chinese tonight.
This bread is delicious, surprisingly light and perfect toasted for breakfast or morning tea. Don’t turn your nose up at the combination……it was part of the produce box and, in the spirit of my post yesterday about using what is available, it became this delicious bread that is on my re-make list again real soon!

Zucchini, Apple and Carrot Bread
1 & ½ cups gluten free self raising flour
1/4 tsp xanthan gum
1/4 cup sugar or sugar substitute like Natvia
2 eggs lightly beaten*
½ cup vanilla yogurt or Vanilla Breeze Almond milk
2/3 cup shredded zucchini
2/3 cup shredded carrot
2/3 cup shredded apple
Preheat oven to 180° or 160° for a fan forced oven. Grease or line your loaf pan.
Combine flour, xanthan and sugar in a large bowl.
Bake 35-40 40 minutes or until a skewer comes out clean.
Delicious sliced and toasted!

- Add the remaining ingredients, except the zucchini, carrot and apple, and mix until just combined.
- Gently fold in the zucchini, carrot and apple and pour into the loaf pan.
- Bake 35-40 40 minutes or until a skewer comes out clean.
