Muffin Monday ~ Very Vanilla Almond Muffins!

Are you sick of me yammering on about the Coles Nut Bar?

I’m sorry if you are bored by my current OCD around this spot of loveliness and I now have to avoid it due to my constant snackity snacking! It is only available at one of our local stores and it’s not one I frequent very much any more, but I did find my favourite delicacy in the nut bar in a prepack bag in the grocery section of another store!

I was both delighted and frightened by this discovery as I have no willpower where this is concerned and the access now is no barrier. Good thing I could make muffins out of them which were absolutely delicious!

To compensate for the nut calories, remember they are GOOD fats in nuts, I made the muffins as low calorie as possible and they turned out fantastic. I’ve already made them again……..no self control!

Very Vanilla Almond Muffins ~ (yields 12 standard size muffins)
1 & ½ cups gluten free self raising flour
½ cup sugar or sugar substitute like Natvia
2 Tbls applesauce
2 eggs lightly beaten
1 cup vanilla yogurt or Vanilla Breeze Almond milk
1 tsp vanilla paste
1 cup crushed almonds (I used French Vanilla Almonds from the Coles Nut Bar!)

Preheat oven to 180° or 160° for a fan forced oven. Grease or line your muffin pan.

Combine flour and sugar in a large bowl.

Add the remaining ingredients, except the almonds, and mix until just combined.

Gently fold in the almonds.

Divide between the muffin holes and sprinkle with extra almonds.

Bake 20-25 minutes or until a skewer comes out clean.

Serve warmed with morning tea……your very vanilla taste buds will thank you!
