Souper Dooper Winter Warmer ~ Gnocchi Soup!

I am always a cold frog and adore all kinds of soups (except split pea and ham……..BLECK!).  But in the past few weeks it has been SO cold and I just cannot seem to warm up.  Endless cups of tea and space heaters are simply not providing the heat I need so soup is on the menu nearly every day, which I’m totally ok with!

I saw a recipe for tortellini soup on Pinterest which I thought looked interesting but, it was high in calories and I am way too frightened to make have been unable to find gluten free tortellini.  Because my family enjoyed the gluten free gnocchi from Simply Wize so much, I thought I would add this to an adaptation of my “Cream” of Tomato and Basil Soup.

Result?  A Souper Dooper Winter Warmer that is hearty and healthy!

Gnocchi Soup ~ (serves 6-8)
1.5 kg of frozen or fresh cauliflower florets
2 x cans of diced tomatoes with juice or 1 x tray of roasted tomatoes prepared
1 x small bunch of fresh basil leaves or dried basil
Gluten free stock
½ tub Philadelphia Stir Through Cream for Pasta
1 x package Simply Wize Gluten Free Gnocchi

If using fresh tomatoes, prepare in the oven by roasting.

Boil the cauliflower florets until very tender with some stock.

Drain off some of the liquid before adding in the cans of prepared tomatoes and basil.

Using an emersion blender, combine all the ingredients to a puree and add additional stock if desired.

Stir in the Philly until completely blended.

Add the gnocchi and allow to simmer for approximately 20 minutes or until gnocchi reach desired texture.

Season well with pepper and serve with an Italian salad and gf crusty bread roll.
