Slow Cooker Sunday ~ Ham and Potato Casserole

Lenten update ~ Today I baked favourite cupcakes for a team member who is “coming in from the cold” of a remote office and holidays.  I think he fancies himself the Prodigal Son so this should add to his self-legendary status.

Remember how I said I was going to have a Serenity Sunday?  Even my efforts to have a “semi” Serenity Sunday failed miserably!  My family was justified in laughing when I suggested it.  I’m going to try harder next week not to fail to relax!

Speaking of FAIL – I had a massive cake fail today that was so bad I broke a knife trying to pry it out of the pan.  Take 2 of the tried and true was much better :)

I did manage to have a wonderful coffee date with my wonderful husband today to Maitland Taste Festival where I had a yummy chocolate covered strawberrystrawb

and promptly dribbled it on my white shirt!

I also bought some wonderful foodie items including a lemon myrtle salt and a relish from my favourite relish maker, Tar 10.  Their items are AMAZING and I was devastated when they discontinued my fave relish, spicy pumpkin.  I even emailed them to ask and was told it was not available.  So today I was speaking to the lovely lady manning the booth when I mentioned my sadness as this loss and she directed me to the Ploughman’s Pickle which was exactly like the pumpkin but with onion added in – bonus!

A lovely coffee later and I stumbled upon this booth….

But I did not buy anything because the booth annoyed me……anyone care to guess why?

But back to dinner ~ because I had a lovely coffee date planned I popped on the slow cooker before we left and family gave the double thumbs up.   Just remember that I told you last week you would need to make the Cream of Chicken Soup for a recipe coming up?  Well, here it is with fantastic results! The recipe is below as well as a second chance to win the Cuisinart Ice Cream Maker!

Slow Cooker Ham and Potato Casserole ~ (Serves a small army + leftovers)
Recipe from Six Sisters Stuff
500 grams potatoes diced (skins on if desired)
1 Tbls dried minced onion
1 tsp salt
1 small container of light sour cream
1 can sized serving of home made/gluten free Cream of Chicken Soup
2 cups grated light cheddar cheese
2 cups cooked chopped ham (I used leftovers)
1/4 cup margarine, melted
1 x serve gluten free Panko Bread Crumbs

Spray the slow cooker with non-stick light cooking spray. Combine the diced potatoes, dried onion, salt, sour cream, cream of chicken soup, cheese, and ham and place in slow cooker.

Sprinkle the Panko crumbs over the top, then drizzle the melted margarine over the crumbs.

Cover and cook on low for 5-6 hours or high 2-4 hours.
