Happy Valentine’s Day! ~ Red Velvet Brownies

Lenten update ~ Today I am eternally grateful for my fabulous team.  I’m having a difficult time and this was on my front step today.

Valentine’s Day is not a huge deal here in Oz (but is getting bigger each year), however, growing up in OK it was so much fun to give and receive Valentine’s cards at school.  I also loved the little conversation heart candies, mainly to read the messages as they kind of taste like chalk, in my opinion!

My parent’s are also celebrating their 32nd wedding anniversary today which means extra special love and hearts in the air.

Gluten Free Red Velvet Brownies~ 1 x 20 x 20cm pan
Brownies
3 Tbls cocoa powder
2 Tbls red food coloring
2 teaspoons vanilla extract
½ cup applesauce or butter
1- & ½ cup sugar or replacement like Natvia
2 wholeeEggs
1 & ¼ cup gluten free AP flour
1/3 tsp xanthan gum
¼ teaspoons Salt
⅔ cups Chocolate Chips

Icing
125 grams butter or margarine at room temperature
1 tsp vanilla extract
2 & ½ cups pure icing sugar
110 grams white chocolate melted
2 Tlbs skim Milk
Sprinkles as desired

Preheat oven to 180° or 160°fan forced and lightly spray a 20 x 20cm pan with low fat cooking spray.

In a small bowl, combine the cocoa powder, red food colouring, and 1 teaspoon vanilla to create a paste. In the bowl of an electric mixer, cream the butter and sugar until fluffy. Add the eggs one at a time, then add the remaining teaspoon of vanilla. With the mixer on medium speed, add in the cocoa powder mixture and beat until batter is completely red.

Add the flour, xanthan and salt, mixing until just combined. Fold in the chocolate chips.

Spread into the pan and bake for 25-30 minutes, or until toothpick inserted in centre comes out clean. Let cool completely before icing.

For the icing:

Cream the butter in an electric mixer until fluffy, then add the vanilla. Slowly add in the icing with the mixer on low speed. Add in the melted white chocolate and beat until incorporated. To reach desired consistency, add in milk 1 teaspoon at a time with mixer on low speed adjusting the milk and sugar to suit.

Drizzle over the brownies and top immediately with sprinkles.
