Wahoo!!!!! Today is the day that my parents arrive! I have hardly slept from excitement and anticipation (as well as compulsive tidying). We are waiting (im)patiently in the arrivals terminal for them to land in about an hour wahoo!!
We are off on holidays for a few days to catch up on lots of laughter, hugs and fun.
In the meantime, why not have a piece of cake? Chelsea’s birthday cake was a double layer that she requested. The bottom was a deliciously light chocolate cake and the top was chocolate chip cookie dough and was the perfect way to top off a very special birthday
Double Layer Birthday Cake
Chocolate Layer:
1 cup sugar or sugar substitute like Natvia
½ cup applesauce
1 & ½ cups gluten free all purpose flour
1/3 tsp xanthan gum
¼ cocoa powder
1 & ½ tsp baking powder
2 eggs beaten
½ cup skim milk
1 tsp vanilla
Cookie Dough Layer:
1 cup sugar or sugar substitute like Natvia
½ cup applesauce
1 & ½ cups gluten free all purpose flour
1/3 tsp xanthan gum
¼ brown sugar
1 & ½ tsp baking powder
2 eggs beaten
½ cup skim milk
2 tsp vanilla
½ cup chocolate chips
Preheat oven to 180° or 160° fan forced. Generously spray 2 x 8 inch round pans.
In a medium bowl, mix together the sugar, and brown sugar for the cookie dough layer, and applesauce.
Beat in the eggs one at a time and then add the vanilla. Add the flour, xanthan, baking powder and cocoa powder, for the chocolate layer, to the wet ingredients and mix well. Stir in the milk until the batter is smooth.
Stir in the chocolate chips for the cookie dough layer.
Pour into the prepared pans. Bake 30 to 40 minutes or until a skewer comes out clean.
Ice with favourite prepared icing adding mini chocolate chips to the sides.
Top with candles, sing, slice and serve!
