Is it wrong to want to kiss a colleague? As I said on Saturday, this weekend was hugely stressful with my data disappearing, a laptop that the hard drive and the motherboard have failed, and basically crying uncontrollably over seemingly lost budget papers. The work papers were recovered on Saturday but not my food photos……until today!!!! I really did want to kiss my two IT heroes but, in lieu of a harassment case, I made them fudge
I don’t have a lot of words today as I still have lots of cleaning to do. I did manage to relieve a bit of stress by conquering the holy grail of recipes in gluten free but still have much to do. Most importantly, I need to wrap presents and ice a layer cake because tomorrow is my sweet Chelsea Bun’s 14th Birthday. I can hardly believe that 14 years have passed but that story is for tomorrow. For today, enjoy this imaginative muffin with a coffee with your friends…….or those colleagues who save your backside!!!
Muffin Monday ~ Apple Custard Muffins (makes 14 standard muffins)
2 cups gluten free self raising flour
1 cup gluten free AP flour
½ tps xanthan gum
½ tps cinnamon
½ cup grown sugar
¼ cup gluten free custard powder
¼ cup applesauce
1 cup skim milk
1 egg beaten
1 large apple grated
¾ cup white chocolate chips
Topping:
¼ cup white chocolate chips
½ apple grated
2 Tbsp brown sugar
Preheat oven to 180° or 160° and line muffins pans with papers.
Combine the flours, xanthan, cinnamon, sugar and custard powder in a large bowl. Fold in the applesauce, milk, egg apples and white chocolate chips.
Mix well and spoon into the muffin tins.
Combine the topping ingredients and spoon a bit on each of the muffin tops.
Bake for 25 minutes or until a skewer comes out clean.
Enjoy warm with butter and a lovely coffee to start the day!
