Slow Cooker Sunday ~ Breakfast Casserole

Have you “Liked” us on Facebook?  Have you seen the Flash Giveaway?  Aside from cooking and eating WAY to much tonight (I feel like I’m going to burst!), we have had a HUGE weekend cleaning up and cleaning out and I am nothing short of exhausted.  But when we were cleaning out downstairs I found a brand new ice cream maker.  Now, I only ordered a Cuisinart ice cream maker this week using my Christmas vouchers so I am giving away the ice cream maker I found today.  All you have to do is be the FIRST to post to the SoS Facebook wall a photo and description of an SoS recipe you have made.  Hurry and post……it’s H-O-T outside and supposed to be hotter by Tuesday so this ice cream maker will keep you as cool as a cucumber!  Clicker HERE to enter.

I have to advise you that there are some of my dishes that I do not taste. They are the ones with meat in them, although I will still eat chicken and some seafood. So I rely upon my culinary critics to give me honest opinions of those carnivorous dishes that I choose not to partake. But this was one that not only got the tick of approval, it smelled so delicious that I just knew I couldn’t go wrong with it. Plus, as you put it in the slow cooker and then go to bed, a hearty and fragrant breakfast awaits your family when they feel like clamouring out of bed. Or in the case of the teenagers, about lunch time :)

Slow Cooker Breakfast Casserole
Recipe slightly adapted from Cooking with Libby
500 grams of pork and beef mince combined
.1 small onion, diced
500 grams of potatoes shredded (food processor works best)
1 and 1/2 cups low fat shredded cheese
6 eggs
1/2 cup skim milk
Salt and Pepper to taste

Brown the mince in a skillet or the slow cooker if yours has this function.   Drain and set aside.

Spray the slow cooker with low fat cooking spray.  Layer the potatoes, meat, onion and 1 cup of cheese.

In a bowl, mix together the eggs, milk, salt, and pepper.

Pour egg mixture over ingredients in the slow cooker and spread the remaining cheese on top.

Cook on low for 7 hours overnight.

Serve with buttered toast and steaming hot coffee.

Not only will you have smiles at the breakfast table, but only one dish to clean up. That makes for a happy family *and* a happy Mum :)

The recipe made a lot of casserole and, at our house, leftovers are greatly appreciated and eaten very quickly.  While it’s hard to see the goodness of the casserole from the top, just look at these layers.  Your family with thank you!
