Slow Cooker Sunday ~ Sesame Beef

Christmas prep is in full swing at our house and the “To Do” list just doesn’t seem to be getting any shorter! The kitchen was absolutely humming today, the dining table is set, some presents are wrapped, Christmas carols are on the iPhone, and I got a lovely visit from friends today.

But, I’m not sleeping well at all and will not be long out of bed tonight. It’s the wake up time that is a big issue so keep for fingers crossed for a “Silent Night.” So forgive the lack of prose and the lack of photos here, but I’m sure you’ll love this recipe. Since I don’t eat red meat I can’t give you a first hand account, but it was well received by the family so passes muster :)

Slow Cooker Sesame Beef ~ (Serves 4)
Recipe slightly adapted from Six Sisters Stuff

1 kilo. boneless beef sliced into thin strips
1 cup beef broth
½ cup teriyaki sauce
500 grams fresh or frozen broccoli florets
1 onion sliced into large chunks
¼ cup water
2 tablespoons cornstarch
1 Tbls rice bran oil
Cooked rice (I made teriyaki black rice….recipe to come!)
Sesame seeds (for garnish)

Pour the rice bran oil into the slow cooker and then place in the beef strips and chopped onion.   Pour beef broth and teriyaki sauce over the beef.

Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours or until beef is very tender.

Place broccoli in microwave-safe bowl with ¼ cup water. Microwave for 4–5 minutes until broccoli is tender.

In a cup, combine cornstarch and 2 tablespoons cooking liquid and stir until smooth. Add to slow-cooker and stir well to combine.

Drain the broccoli and stir into the slow-cooker. Cook uncovered on HIGH for about 15 minutes or until the sauce is thickened. Serve over hot, cooked rice and garnish with sesame seeds.
