Last week Roy and I went to a fancy dress party. I need to solemnly state that I absolutely despise am not fond of fancy dress. I don’t mind if it is themed and I have something to wear, but I think that full on fancy dress freaks me out. Thinking about it, it may be that it usually involves costume hire which, in my mind, equates to wearing a complete stranger’s clothing. Or more like 1000 stranger’s clothing since there is no telling how many times the same outfit has been worn. Germ issues, Lisa? You bet!
So, the party was Bollywood themed and I was seriously pleased when one of Chelsea’s friends had a costume I could borrow. I can handle wearing clothing from someone I know that has only been worn once. However, Roy had not organised his costume so I STILL had to go to the costume hire. Picture a dark, crowded, musty shop that is absolutely packed with irritating people that are laughing and carrying on about dressing up. All I wanted was a simple male costume and to get out…….50 minutes later (don’t ask!) I had the costume in hand.
Getting dressed up was tolerable but when we arrived at the party, the decorating was fantastic. The hosts had set up pallets on the ground and covered everything with Indian printed scarves, cushions and tapestries and it looked fabulous. A full spread of Indian food was available, but not for the gluten challenged. The aromas were as divine as the decorations and company on the night but led to a craving for some butter chicken safe for Celiac dining.
I saw this new product by Celebrate Health at the supermarket and it played right into my Bollywood frame of mind! It is completely gluten free as well as vegan, which amused me since it was going on chicken but I suppose you could use it on lentils just as easily!
Road Test Tuesday ~ Celebrate Health Butter Chicken (serves 4)
3 x large chicken breast fillets washed and dried
1 x Celebrate Health Butter Chicken sauce (I used 2 to ensure it was saucy)
A pinch of salt
2 Tbls olive oil
Boiled rice prepared
Livwell gluten free pita bread
lime wedges and chopped coriander to server
Skillet Method:
Cut the chicken into bite size pieces. Place olive oil into a skillet and cook the chicken until almost cooked through. Add in the Celebrate Health sauce and reduce to simmer.
Slow Cooker Method:
Place olive oil into the bottom of the slow cooker. Add chicken fillets and sauce. Cover and cook on high for approximately 2 & ½ – 3 hours until chicken falls apart.
Boil the rice and warm the pita as per the package directions (I like them lightly toasted).
Serve the chicken over the rice with the pita, a pinch of chopped coriander and the pita.
Celebrate Health Butter Chicken verdict – 8/10 very good sauce with subtle flavours. If you are a spicy butter chicken fan, you will need to add your own additional spices for a bigger kick. Costumes are optional
