Dinner Party Delicious!

Don’t you just love it when a good dish comes together?   I have been looking forward to making this for such a long time and when friends came for dinner, it seemed like the perfect opportunity.   Not only is it something you can prepare ahead of time and then enjoy your friends’ company rather than being stuck in the kitchen, it is so easily made gluten free and everyone will love it.

This one will definitely be back on the menu sooner rather than later and I’ll be sure to make extras to stash away to pull out of the freezer for a busy week night meal.   If you really plan ahead, you can use your very own pasta sauce that we made a few days ago.   Gina from Skinnytaste is an absolute genius in providing super low fat but incredibly delicious meals.   Make this one, it’s only 5 pro points for each rollatini!


Chicken Rollatini with Spinach – (yields 9 individual servings)
Original recipe from Skinnytaste
3 x single chicken breast fillets
1/2 cup gluten free breadcrumbs
1/4 cup grated parmesan cheese
1/3 cup of egg whites
150 grams frozen spinach, thawed and squeezed dry of moisture
175 grams light ricotta cheese
175 grams light mozzarella
1 cup pasta sauce
Salt and pepper to taste

Wash and pat dry the chicken breast fillets and slice lengthwise into 3 small cutlets.   Season with salt and pepper.

Preheat the oven to 220 or 200 for fan forced.

Combine breadcrumbs and 2 tbsp grated cheese in one bowl and 1/3 the egg whites in another.

Combine approximately 40 grams of mozzarella with remaining grated cheese, spinach (make sure you squeeze it dry), remaining egg whites, and ricotta cheese.

Lay the cut chicken fillets down on a working surface and spread 2 tbsp of spinach-cheese mixture on each piece.

Loosely roll each one and keep seam side down.

Dip chicken in egg mixture, then in breadcrumbs and place seam side down in a baking dish. Repeat with the remaining chicken.   When finished, lightly spray with light cooking spray. (I covered with foil and put in the fridge at this point so I could just pop them in the oven when our guests arrived).

Bake 25 minutes.   Remove from oven.  

You can put additional cheese on top and put back in the oven for about 3 minutes if you desire.   Served with baked polenta and veggies.  Enjoy with friends!
