Slow Cooker Sunday – Cola Chicken (a family favourite)

It seems I spend the entire weekend running around like an absolute lunatic trying to get everything sorted for the week to come including cooking, cooking, cooking, cleaning, cooking, laundry, cooking, ironing etc. But by Sunday afternoon I’m usually just about exhausted and the slow cooker has become my Sunday serenity. Remember when I didn’t want one? What a fool!!! But slow cooker meals are not just for the comfort of winter. Don’t be limited by the temperature outside because it makes sense to use appliances inside that don’t heat your kitchen as we approach summer.

This recipe is so super easy and is a big hit with the family. When finished, the chicken simply falls apart to shred it and is delicious on a bun, in a wrap, on a salad…..really the possibilities are endless.

Slow Cooker Sunday Pulled Soda Chicken (serves a small army)
1.5 kgs of chicken breast
1 cup BBQ sauce (Heinz is gluten free)
1 large onion, peeled and thinly sliced
1 cup Coke, Coke Zero or Diet Coke cola

Wash and pat dry your chicken breasts, remove any “yucky bits” and cut each breast fillet into 2 pieces. Place chicken breasts in crock pot and add the chopped onion.   Pour the cup of sauce and the Coke and stir.   Cover and cook on low for 6-8 hours or high for 3-4 hours. Yep, that is IT!

When the chicken has finished cooking, remove the chicken with a slotted spoon to a large bowl and let cool slightly. Shred the chicken with tongs and a fork because it is going to be hot hot hot. Return to the slow cooker but make sure it is turned off.  Stir the chicken in the remaining sauce, removing any depending on how saucy you want it.    Serve on a bun with a side of home made potato or pumpkin fries.  

Leftovers can be stored in the fridge for 3 days or why not freeze? I just love having extra base ingredients to makeover, especially for those weeknights that are all about food on the table fast.
