A Better Bar

While my first attempt at GF snack bars tasted delicious, the presentation was lacking and variety is the spice of life, right?  What could be better than an oatmeal chocolate chip cookie in a gluten free healthy package?  Adding a cup of cranberry zinger tea and calling it a morning!

GF “Oatmeal” Choc Chip Snack Bars (yield = 2 snack bars)

85 grams Gluten Free Oats (I used Bob’s Red Mill Quinoa oats)

80 grams fresh dates pitted

1 & ½  Tablespoon Nestle mini baking bits

¼ teaspoon of natural vanilla

Pulverise the oats in the food processor and transfer to a bowl.  Process the dates in the food processor until it makes a sticky ball.  Add back in the oats, vanilla and chocolate bits and pulse until the mixture comes together.  It will be quite a dry mixture but will come together nicely in the pans.

Line 2 mini loaf pans with cling wrap with generous overhang and divide the mixture into the pans.  Press down to form a “bar” and wrap tightly.  I flipped mine over and then pressed in again to have a consistent bar shape on both sides this time. Chill in the fridge and will keep for 4-5 days while you dream up other varieties to test.
